Food & Cuisine in Minsk
If you'd just like to relax in a pleasant ambience and guzzle a few pints, try the Rakovski Brovar in the small independent brewery called Vitebskaya. If you like pancakes, Minsk is the place for you with its pancake (bliny) restaurants. One of the best you can eat in is the well-known Tet-a-tet on Skaryny Avenue. You can choose from a whole range of fillings and sauces, and to top it all, it's cheap.
One thing to keep in mind when eating out is that extras such as chips, vegetables, rice, butter, etc. are considered as separate items, and before you realise it, they add up on your bill. Kefir is the common Belarusian drink. It is a kind of sour milk akin to yogurt.
Vegetarians
If you are vegetarian or vegan, be warned that meat is the common fare in Belarus. The people here don't think they have eaten a meal unless it has meat. However, because the potato is so popular here, you can always find a vegetarian side dish. Look out for borsch which sometimes contains only potato and beetroot and golubsty stuffed with rice. However, if you are vegan you'll find it difficult to find something suitable to eat in Minsk. If you are lucky, you could find an Indian restaurant.
Traditional Food
Belarusian cooks value their national traditions, and you'll find many unique dishes here with old recipes that have stayed the same such as holodnik, zatirka, draniki, and machanka. These dishes are famous even beyond Belarus. The people of Belarus consider the potato as a substitute for bread. There's potato babka, potato pancakes, potato kliotskas, and many more dishes made with potato. Meat dishes eaten all over the country are machanka, and roast peasant, while freshwater fish as well as forest berries are a big part of Belarusian cuisine. Seasonings like garlic, pepper, and parsley are utilized in moderate amounts.
In Belarus the art of cooking has always had close ties with lifestyle, customs, and culture. Arable farming was the norm in the country which meant an abundance of vegetables and grain. They grew wild herbs such as orache, nettle, sorrel, field garlic, and meadow onions, and a lot of mushrooms and berries. Rye, barley, wheat, buckwheat, oats, and peas have persisted since ancient times in Belarusian food. They preserved foodstuff in the old days through the methods of drying, souring and salting. Mushroom, fish, and fruits were dried on the fire. Their daily nourishment came from grains and vegetables grown in their kitchen gardens and fields. Brown rye bread was a very important nourishing food. Every Belarusian child was brought up to respect bread and never waste it. Interestingly, the Belarusians have plenty of proverbs and sayings related to bread.
Mealtimes for Belarusian peasants were determined by their work schedule. A typical breakfast featured boiled potatoes, baked pancakes and an omelette. For their second meal of the day at noon (dinner), they usually ate as a first course, borsch cooked with meat, fat, and mushrooms. The second course consisted of cereal and potato dishes. They washed it all down either with kvass which was a mildly alcoholic beverage brewed from fermented rye bread, yeast or berries, compote or sour milk. When they went to work in the fields, they carried along with them some kvass, porridge, and pancakes. Supper was usually a freshly cooked dish with potatoes or stock. Belarusian food had much to do with the season. For example, in summer there was mainly vegetarian fare: green onions, cucumbers, beans, dairy products and of course, kvass.
However, when it was hard work in the fields, the peasants preferred meat, fat, and sausages. While there was an abundance of cereals, bread, and meat in autumn and winter, spring heralded the fasting and controlled food intake that came with Lent. During this time, the church forbade the eating of meat and milk products. Instead, Belarusians had to satisfy themselves with foods that the church allowed during Lent: plants, fish, mushrooms, and Zatirka, a traditional dish made from flour.

Rakovsky Brovar

The management claims that it usually takes only up to 15 hours to deliver fresh marine products from the Adriatic Sea to the Minsk restaurant.
